Vegan, Gluten-free, Nut free, Sugar-free

INGREDIENTS

1 cup Local Village bambara beans, cooked OR canned

1 red pepper, diced

1 tbsp tomato paste

1 clove garlic, minced

1 tsp Paprika

1 tsp Salt

½ Pepper

½ tsp cayenne pepper or chilli flakes, (optional)

2 tbsp Tahini

¼ cup Olive oil

½ cup cold water

To Serve

Crispy Bambara beans

Olive oil

Additional paprika or chilli flakes for dressing

METHOD

  1. Place the red pepper in a saucepan with olive oil. Sauté for 3 minutes on low-medium heat until soft. Add the tomato paste and garlic, cook for 2 minutes. Add the seasoning and sesame or tahini, remove from heat and allow to toast in the pan.
  2. Meanwhile, place the beans, oil and water in a blender with the red pepper mixture.
  3. Blend until smooth – Use a spoon to help mix the beans around and blend more easily.
  4. Add olive oil to come to a smoother consistency.
  5. Dish the mixture onto a plate, scatter with olive oil, paprika and chilli flakes. Dress with fresh parsley and serve with crackers
